Shepard’s Pie with Ground Turkey and Cauliflower Mashed

I just finished another Paleo Challenge with my team.  I love the Paleo Diet.  It’s not something I would follow for a lifetime.  But, I love doing it from time to time to keep by body guessing and to inspire me to be creative in the kitchen.  One of my family’s favorite recipes that is Paleo friendly is Shephard’s Pie with Ground Turkey and Mashed Cauliflower.

It’s a healthy, clean meal that even the kids went back for more and more. 


For the top layer
2 heads cauliflower, cut into florets
Garlic cloves
Olive oil (or butter, depending on your diet preference)
Almond milk
Himalayan Salt and freshly ground black pepper

For the bottom layer
Large onion, diced
3 carrots, diced  – I add more veggies sometimes.  It’s up to you!
2 lb. lean ground beef or ground turkey
2 tbsp ketchup
1 cup vegetable broth
Salt and freshly ground black pepper

Top Layer

  1. Preheat oven to 400 degrees F. Peel away the outer layers of the garlic bulb, then cut off the very top of the head of garlic to expose the individual garlic cloves. Place in aluminum foil and drizzle with olive oil, then seal the foil around the garlic. Bake for 15 – 20 minutes, until the cloves are soft. Allow garlic to cool, then squeeze the roasted garlic cloves out of the skin.
  2. Meanwhile, place a couple inches of water in a large pot. Once water is boiling, place steamer insert and then cauliflower florets into the pot and cover. Steam for 12-14 minutes, until completely tender. Drain and return cauliflower to pot.
  3. Add roasted garlic, almond milk, olive oil (or butter), and salt to the cauliflower. Using an immersion blender or food processor, combine ingredients until smooth.

Bottom Layer

  1. Brown ground turkey and drain.
  2. Mix the remaining bottom layer ingredients in and let simmer
  3. Spread the meat mixture on the bottom of the dish. Top with the cauliflower mixture and smooth with a spoon.
  4. Sprinkle with Paprika for color (optional)
  5. Bake for 30 minutes or until the top is bubbly.
